How to Use: Break off small pieces of the katti perungayam and keep it in a glass heat proof plate. Microwave for 1 minute. It will puff up slightly. Take it out and let it cool. Microwave again for 1 minute and let it cool completely. Transfer the bits to a small clean mixer jar and powder it well. Store in clean jars.
Ingredient: Dry roast the coriander seeds, black mustard seeds, and dried red chilies in a pan on low heat until golden. As soon as the spices have roasted, remove them from the heat, empty them into a bowl and leave to cool slightly. Add the asafoetida, turmeric, and curry leaves to the roasted spices and lentils, and blitz together using a spice mixer until a powder.
